Ingredients for 4 people
Celery, carrot, onion
500 g of magatello calf ( one piece)
10 Zuccato sour gherkins
1 red tomato
1 lemon
2 tablespoons of mayonnaise (preferably with yogurt)
1 tablespoon capers
2 anchovy fillets in olive oil or unsalted
150 g of canned tuna
2 tablespoons of oil
Salt and pepper

Boil spices in water, add salt and then cook the meat over a low flame for 40 minutes (to be done in advance). To get the sauce, blend the vegetables with tuna, olive oil and mayonnaise by combining the capers and anchovies. Season it to get the flavour ( join the meat broth if necessary). Slice the meat once it has cooled and sprinkle it over the sauce. Serve with diced cucumbers and tomatoes, and with small sliced lemons.
