Ingredients for 4 people

2 Lts of water
1/2 turkey
1 piece of hen
2 carrots, 1 stalk of celery, 1 onion
3 cloves
200gr of Zuccato sauerkrauts
salt and pepper (as needed)
12 quail eggs


Unite all the ingredients to the water except for the cabbage and the quail eggs. Cook the broth for about two hours, then strain it and fillet the turkey. Boil the quail eggs for 10 minutes and shell them. Heat the sauerkrauts in a pan for 20 minutes.
Final garnish
Pour the broth in a bowl and add the sauerkrauts, the turkey fillets and 3 quail eggs. Sprinkle with chopped parsley.
