Ingredients for 4 people
500 g of dried marinated cod
15 Sweet and sour Zuccato gherkins
10 black olives
40 g of toasted sliced almonds
3 tablespoons extra virgin olive oil
Salt and pepper
Boil the salted cod for 5 minutes in unsalted water and diluted with lemon juice. Then wait another 5 minutes. At the same time, stew the leak slices in a saucepan with the oil with a very low flame. Put a little water if necessary to soften the leaks. Cut the cucumber into large pieces and then add the cod, leaks, pickles and olives. Finish with a little olive oil and the toasted almonds.
