Ingredients
- Zuccato Artichokes, about 2 per person
- 200g sliced speck
- 100g Tuscan Pecorino cheese
- Extra virgin olive oil
- Fine salt
Pan-browned artichokes, toasted bread, speck and Tuscan Pecorino shavings make a boldly flavoured bruschetta. The artichokes are drained and browned with a little oil, then arranged on the bread and finished with the other ingredients. A simple preparation intended for a warm, substantial starter.
Method
Drain the Zuccato Artichokes from their vinegar, then brown them in a pan with a drizzle of oil, lightly salt them and brown them on each side.
Separately, toast some bread until crispy, and once toasted, top it with the browned artichokes.
Garnish by adding a slice of speck and flakes of Tuscan Pecorino cheese.
