Sauerkraut and Spelt Salad:
Ingredients: 200 g spelt, 100 g sauerkraut, 1 lemon, Extra virgin olive oil, Fine salt.
Preparation time: 20 minutes
Procedure:
Cook the farro in plenty of salted water for about 15 minutes. Once cooked, drain and allow it to cool. Once cooled, toss with the sauerkraut, mixing well, and season with plenty of lemon zest, extra virgin olive oil and fine salt. Serve cold, also ideal as a side dish.
