Procedure:

A fresh, nutritious and healthy dish at the same time? Make a Niçoise salad; just combine lettuce, auburn tomatoes, Bella di Cerignola Olives with Zuccato Stone and Zuccato Roasted Black Olives, steamed green beans and potatoes, hard-boiled eggs, red onion and tuna. Date gazpacho with buffalo mousse and Cerignola Green Olive tartare:

Ingredients: 1 kg cherry tomatoes, 50 g Cerignola Green Olives, 1 clove of garlic, Extra virgin olive oil, 4 buffalo mozzarellas, 100 ml UHT cream, Fine salt.

Preparation time: 10 minutes

Procedure:

Blend the cherry tomatoes with the basil, fine salt, garlic and extra virgin olive oil. Next, add the mozzarella and cream, too, until the mixture is firm but smooth. Chop the green olives.
Next, serve the gazpacho in small glasses by filling the glass halfway, add the mousse and finally the green olive tartare until the small glass is full.
