Ingredients: Pitted black olives 100 g, 100 g cow’s ricotta cheese, Ground black pepper, Fine salt, Breadsticks
Preparation time: 5 minutes
Procedure:
Cook the octopus, taking a tall pot, fill it with water, about 2 liters, add a bay leaf, a pinch of salt and bring to a boil. When the water boils, dip and resurface the octopus tentacles 4 times, then let it cook for about 20 minutes, skimming while cooking, without a lid. When the 20-minute cooking time is up, turn off the heat and let the octopus cool inside its cooking water for about 1 hour. Once the time is up, dice the octopus, dice the giardiniera as well, and pour everything into a bowl. Season with lime zest and extra virgin olive oil.
