1 duck
citrus juice. 3 oranges and 2 lemons
400 g Zuccato sauerkraut
extra virgin olive oil
rosemary
sage
1 onion
2 carrots
white wine
salt and pepper
Procedure
Clean the duck well and stuff the inside with Zuccato sauerkraut. Brown it in a baking dish with oil, rosemary, sage, onion and diced carrots. Wet it with the wine and citrus juice. Season with salt and pepper and bake in a 160° oven for about 90 minutes, turning often. Cut the duck into 4 parts and serve on a bed of sauerkraut and cooking juices.
