Red rice, giardiniera and shrimp salad:

So much craving for vegetables? We recommend that for a healthy, balanced and quick meal, you use Zuccato Gourmet Giardiniera to dress a salad with red rice and shrimp. Cook the red rice according to the manufacturer’s instructions, steam some pink shrimp, and combine all the ingredients together with the giardiniera. Season everything by whisking 1 tablespoon of the giardiniera preservation liquid with 2 tablespoons of EVO oil and adjust salt and pepper. Enjoy #Zuccappetito

Octopus giardiniera:

Ingredients for 4 people: 1kg fresh octopus, 2 limes, 200gr giardiniera, Extra virgin olive oil. Preparation time: 10 minutes Cooking time: 25 minutes

Procedure:

Cook the octopus, taking a tall pot, fill it with water, about 2 liters, add a bay leaf, a pinch of salt and bring to a boil. When the water boils, dip and resurface the octopus tentacles 4 times, then let it cook for about 20 minutes, skimming while cooking, without a lid. When the 20-minute cooking time is up, turn off the heat and let the octopus cool inside its cooking water for about 1 hour. Once the time is up, dice the octopus, dice the giardiniera as well, and pour everything into a bowl. Season with lime zest and extra virgin olive oil.
