Tomato Soup with Sweet and Sour Cucumbers:
Ingredients for 4 persons: 1 kg ripe tomatoes, 2 sweet-and-sour cucumbers, 300 g bread crumbs, 100 ml, extra virgin olive oil, 1 clove of garlic, fine salt.
Preparation time: 10 minutes
Procedure:
Let the breadcrumbs soak with 100 ml of water.
Cut the tomatoes, remove the seeds being careful not to lose the juice.
Now take a blender, pour in the breadcrumbs with the tomatoes and garlic and blend for about 1 minute. Add the oil, continuing to blend until you have a full-bodied mixture. Season with fine salt and accompany the sauce with hard-boiled eggs and the chopped sweet-and-sour cucumbers.
