A salmon steak quickly cooked in a pan is accompanied by Zuccato Giardiniera dressed with sour cream and chives. The recipe contrasts the fish with the tangy vegetables, using a short preparation and just a few ingredients. A simple suggestion for serving giardiniera alongside a fish main course.
Soak the breadcrumbs with the almonds and half of the water and half of the vinegar for about 15 minutes. Meanwhile, dice the Zuccato Giardiniera into small cubes and place in a bowl.
Cook the octopus by filling a tall pot with approximately 2 litres of water, adding a bay leaf and a pinch of salt, then bring to a boil. Once the water is boiling, dip the octopus tentacles in and out 4 times. Then, let it cook for about 20 minutes, skimming during cooking, without a lid. After 20 minutes of cooking, turn off the heat and let the octopus cool in its cooking water for about 1 hour. Once cooled, dice the octopus and the Zuccato Giardiniera, then place everything in a bowl. Dress with lime zest and extra virgin olive oil.
