Skewers Of Pork Glazed With Honey And Sage And A Cabbage Braised Cucumber Salad

Ingredients for 4 people
500 g pork fillet
1 yellow pepper
1 tablespoon chestnut honey
6 sage leaves
2 dl of beer
20 Sweet and sour Zuccato gherkins
¼ cabbage
1 fresh onion extra virgin olive oil
Salt and pepper

Preparation
Place the finely chopped cabbage in some water and cook for 3 minutes. Meanwhile, stir some onions in a saucepan with oil and then add the cabbage, that has been steamed. Season it with salt and pepper. Make sure to cut the pepper into small pieces. Do the same with the pork. Splice them into long skewers, alternating the pieces.

Fry the skewers for 3 minutes in a pan with oil, lift them delicately in the pan and lightly pour a little beer on them; then combine it with honey, salt and pepper and chopped sage. As soon as everything starts to simmer, refit the pan and bring the skewers so the topping can be cooked. Serve it with cabbage enriched with chopped gherkins or it can be served with sweet mustard.
